Menu Monday: Kiss Me Chocolate Chip Cookies





I am always making CCC a million different ways, just search Chocolate Chip Cookie/s on here and you'll get a few hits. Can't help it. These are chewy soft yummies. And I had a ton of chips I needed to use up. When a few cooled I took them on a plate to Pixie girl- she took one, walked away took a bite and came back towards me, I told DH, "yup she wants one in each hand..." NOPE. She came over, put her arms around me and kissed me... then took the other cookie. I love that little baby.




2 sticks melted butter
1/4 c sugar
1 1/4 c brown sugar (lightly packed)
2Tbs milk
2 tsp vanilla
2 eggs
2 Tbs sour cream

Sift-
2 1/4c bread flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt- I used kosher last night

1 cup oats
2 cups chocolate chips
1 cup nuts (optional)

Cream sugars and butter until light and fluffy. Add remaining wet ingredients. Beat well. Mix in flour mixture. Stir in oats, chocolate and nuts.

Chill dough thoroughly. I left this dough overnight in the fridge. I used a small cookie scoop for these cookies. I baked them on stoneware. Which took longer, than my standard parchment lined jelly roll pan. Bake at 350 degrees for 9-10 minutes depending on your oven.

You can also scoop the dough onto a cookie sheet, flash freeze the dough balls and put them in a Zip top bag and bake a few at a time.

OR roll the dough into logs and wrap in plastic wrap and slice and bake them also.

Mommies Weigh-In Challenge

Are you looking to shed a few pounds? Need some help with your fitness goals? Or just searching for the right foods to eat? The Mommies Network challenges you to be the best you can be in 2012!

Menu Mondays

Here's a great spicy grilled steak recipe from Sarah!

Take 1 1/2 lb flank steak and marinade in the following:
1/2 cup chopped fresh cilantro
1/4 cup olive oil
6 minced garlic cloves
2 tablespoons ground cumin
1 tablespoon ground coriander
1 tablespoon chili powder
1/2 teaspoon cayenne pepper
Chopped fresh chilies, including seeds (optional)

Marinade 3-4 hours room temperature or overnight in the fridge. Grill 6 minutes per side for medium rare, rest for 10 minutes and slice thinly against the grain.

Menu Mondays

It's that time of year - zucchini's coming out of your ear! Here is a zucchini bread recipe from my grandma.

2 cups sugar
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons cinnamon
1/4 teaspoon cloves
1/4 teaspoon ginger
2 cups grated zucchini
3 teaspoons vanilla
3 eggs
1 cup oil
1/2 cup chopped nuts (optional)

Mix dry ingredients in bowl, add remaining and pour into 2 loaf pans. Cook at 325 degrees for one hour.

Menu Mondays

Here are some great easy menu ideas from our members:

Fish Nuggetts (courtesy of sarahlongwell)
Tilapia, dredged in whole wheat flour, panko and eggs, and fried in a saute pan

Salsa Chicken over Rice (courtesy of jbd)
Frozen chicken in a 9x13 pan
Pour salsa over the top
Bake at 350 degrees
Sprinkle with shredded cheese right before done, return to oven to melt the cheese
This can also be done in the crockpot!

Grilled Top Sirloin Steaks (courtesy of Missyd)
Marinate in olive oil, beer, worcestershire sauce, low sodium soy sauce, balsamic vinegar, molasses, garlic and onion powder.
Grill indoor or out depending on the weather!

10 Tips to Prevent the "Summer Slide"

As summer vacation begins for the traditional calendar schools, kids are excited about the long days of playing with friends, going to camps and taking family vacations. Summer vacation is time for having fun and relaxing after a long school year. But as parents, we need to remember to keep our kids' brains active to prevent the so-called "summer slide," that loss of lessons learned, the slip backwards in reading and other academic areas that occurs for many children during the long summer break.

Here are 10 Tips to Prevent the Summer Slide:

1. Read every day. Most teachers require kids to read for 10 to 30 minutes every day during the school year. Don't let your kids get out of this reading habit during the summer. Encourage them to continue to read every day. And for those who have required summer reading lists, make sure they find time to read books they WANT to read as well, so reading doesn't become a dreaded chore. Keep them reading and keep them happy!

2. Sign up for a reading challenge. Book stores, libraries and various online resources, including Scholastic.com, host reading challenges during the summer where kids are encouraged to track their reading ~ either the minutes read or the actual books read ~ throughout the summer. Some even provide rewards such as free books to participants, which can give kids the extra motivation they need to read.

3. Read aloud to your kids ~ or at least let them see you reading. Spend time reading aloud to your kids. This can expose them to more complex stories that they aren't yet able to read themselves. It introduces new vocabulary and different types of literature. If your kids aren't interested in listening to you read aloud, make time to sit together and read silently to yourselves so they can see the enjoyment you get from reading.

4. Start a journal or diary. To keep their writing skills going throughout the summer, encourage your kids to write in a journal or diary about their summer activities. If you go to the zoo, suggest they write about it. If your child is more creative, have them make up their own stories, or work with them to create a scrapbook in which they write and choose pictures to include. Find ways to make writing fun.

5. Play games as a family. Board games, card games and yard games all offer kids an opportunity to think, build strategies, and even hone their math or reading skills. Scrabble helps with spelling. Monopoly helps with math. Uno helps with developing strategies, as well as color and number recognition for younger kids. Games offer a great way for the family to come together while discreetly learning too.

6. Take a trip to a museum. Visiting museums is a great activity for the whole family. Many museums are now set up with hands-on activities for kids, and engaging programs that you can attend. Kids can learn about art, animals, science, history and many other topics, depending on which museums you choose. Give your kids the power to choose one that interests them.

7. Track the weather. How many sunny days will you have this summer? How many rainy days? When will humidity be the highest? Make some predictions and then track the weather to see if you're right. Kids can build their observation skills, and learn about weather, graphing, patterns and predictions by tracking the weather throughout the summer.

8. Explore nature. Science lessons don't have to stop just because school is out. Kids can discover all sorts of things about animals, plants and the earth in your own backyard. Get outside and flip a rock to discover what's living underneath. Observe the types of birds that live in your yard. Plant a garden or some flowers and have the kids take care of them. There are many science lessons to learn outside.

9. Stay healthy. Keep the physical education and health lessons going this summer. Get your kids outside every day to ride bikes, go swimming, play sports or just take a walk. Keep them moving and staying active. And spend time this summer learning about healthy foods. Visit the local farmers' market, and try some new fresh vegetables and fruits that are native to your area. Talk to your kids about healthy eating.

10. Plan a vacation. Most families take some sort of summer vacation, whether it's for one night or an entire month. Get the kids involved in planning this year. Show them your vacation budget, and talk about the cost of gas or airline tickets. Have them map the route you'll take, and calculate time and distance. Involve them in planning your itinerary. Let them pack their own things based on the number of days and nights you'll be away. There are many lessons to learn in planning a vacation.

All of these activities keep your kids' brains going, engaging them in thinking, calculating, reading, interpreting and learning. By keeping their bodies and minds strong throughout the summer, they will be better prepared when the new school year begins.

Eight Sleep Tips for Every Child

Up to 70% of children under age five have sleep problems. Sleep issues are complicated and have many causes. They’re hard to deal with because when children aren’t sleeping, parents aren’t sleeping, and that lack of sleep affects every minute of every day for every person in the family because lack of sleep isn’t just about being tired. Sleep has a role in everything -- dawdling, temper tantrums, hyperactivity, growth, health, and even learning to tie his shoes and recite the ABCs. Sleep affects everything.

The following ideas are of value to almost any sleeper, of any age. These tips can bring improvement not only in your child’s sleep, but also in her daytime mood and last, but not least – improvements in your own sleep and outlook as well.

# 1 Maintain a consistent bedtime and awaking time.
Your child’s biological clock has a strong influence on her wakefulness and sleepiness. When you establish a set time for bedtime and wake up time you “set” your child’s clock so that it functions smoothly. Aim for an early bedtime. Young children respond best with a bedtime between 6:30 and 7:30 P.M. Most children will sleep better and longer when they go to bed early.

# 2 Encourage regular daily naps.
Daily naps are important. An energetic child can find it difficult to go through the day without a rest break. A nap-less child will often wake up cheerful and become progressively fussier or hyper-alert as the day goes on. Also, the length and quality of naps affects night sleep – good naps equal better night sleep.

# 3 Set your child’s biological clock.
Take advantage of your child’s biology so that he’s actually tired when bedtime arrives. Darkness causes an increase in the release of the body’s sleep hormone -- the biological “stop” button. You can align your child’s sleepiness with bedtime by dimming the lights during the hour before bedtime. Exposing your child to morning light is pushing the “go” button in her brain — one that says, “Time to wake up and be active.” So keep your mornings bright!

# 4 Develop a consistent bedtime routine.
Routines create security. A consistent, peaceful bedtime routine allows your child to transition from the motion of the day to the tranquil state of sleep. An organized routine helps you coordinate the specifics: bath, pajamas, tooth-brushing. It helps you to function on auto-pilot at the time when you are most tired and least creative.

# 5 Create a cozy sleep environment.
Where your child sleeps can be a key to quality sleep. Make certain the mattress is comfortable, the blankets are warm, the room temperature is right, pajamas are comfy, and the bedroom is welcoming.

# 6 Provide the right nutrition.
Foods can affect energy level and sleepiness. Carbohydrates can have a calming effect on the body, while foods high in protein or sugar generate alertness, particularly when eaten alone. A few ideas for pre-bed snacks are: whole wheat toast and cheese, bagel and peanut butter, oatmeal with bananas, or yogurt and low-sugar granola. Vitamin deficiencies due to unhealthy food choices can affect a child’s sleep. Provide your child with a daily assortment of healthy foods.

# 7 Help your child to be healthy and fit.
Many children don’t get enough daily physical activity. Too much TV watching and a lack of activity prevents good sleep. Children who get ample daily exercise fall asleep more quickly, sleep better, stay asleep longer, and wake up feeling refreshed. Avoid activity in the hour before bedtime though, since exercise is stimulating – they’ll be jumping on the bed instead of sleeping in it!

# 8 Teach your child how to relax.
Many children get in bed but aren’t sure what to do when they get there! It can help to follow a soothing pre-bed routine that creates sleepiness. A good pre-bed ritual is story time. A child who is listening to a parent read a book or tell a tale will tend to lie still and listen. This quiet stillness allows him to become sleepy.

Work with these eight ideas and you’ll see improvements in your child’s sleep, and yours too.

July Events!

Have you been to one of our events yet? If not, you are totally missing out! Last month we had a ton of fun at the John’s Incredible Pizza family fun night and all the kids slept wonderfully letting us ‘rents get some much deserved sleep too. Then the mommies got some sweet time for girl talk over coffee and cheesecake at the infamous Cheesecake Factory in Washington Square Mall. We got to strip down and share clothes at the clothing swap and get a little tipsy during the Tuesday evening online chat sessions. Seriously, you don’t want to miss our events! And July is going to be packed full of summer fun. We have some walks planned around Commonwealth Lake plus some park and home playdates. This month there is a tribute to those who just love the “So, You Think You Can Dance?” show with a viewing party. There’s a concert in the park and an educational baby sign class on the calendar too! We are always open to new event ideas, contact the event manager, Whitney, with your great ideas. She is always happy to help plan events for our mommies!

Healthy Banana Bread Recipe

I've been making this recipe for years - it's so healthy and yummy! And I recently discovered that my 19 month old loves it as much as I do.

Almost No Fat Banana Bread

Ingredients

1 1/2 cups all purpose flour
3/4 cup white sugar
1 1/4 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoon ground cinnamon
2 egg whites
1 cup banana, mashed
1/4 cup applesauce

Directions

1. Preheat oven to 350 degrees. Lightly grease an 8x4 inch loaf pan.
2. In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan.
3. Bake in a preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.

Summertime Water & Sun Safety

Sunny weather has finally arrived in Oregon! Remember to stay safe this summer!

Whether it's spring break or summertime, it's important for parents not to take a vacation from safety. While warmer weather means endless hours of sun and fun for kids, it's also an opportunity for both minor and serious injuries. In fact, summer is the most dangerous time of year for kids - nearly half of all unintentional injury-related deaths among children occur during the summer.

"Tragedies peak during the summer months because children are supervised less, have more free time and engage in more outdoor activities," said St. Joseph's Children's Advocate Bevin Maynard.

To help parents and guardians prevent unintentional summertime injuries, St. Joseph's Children's Hospital of Tampa recommends the following:

Swimming Safety Tips

The National SAFE KIDS Campaign recommends that parents always supervise children around water and install fencing that completely surrounds all pools, spas, whirlpools and hot tubs. Pool fences should be at least five feet high and have self-latching gates.
Some states require newly constructed in ground pools to have fencing on all four sides. To find out the law in your state, go to www.safekids.org
Pool alarms and pool covers can offer an extra layer of protection. However, do not rely on them to keep your kids safe; they should be used in conjunction with fencing and constant supervision.

Know which of your child's friends and neighbors have pools. Make sure your child will be supervised by an adult while visiting.

Children should learn to swim. Enroll them in swimming lessons taught by qualified instructors when they are ready, usually after age 4. If you don't know how to swim, enroll with your kids!

Do not let children dive into water unless the child has learned proper diving techniques, an adult is present and the depth of the water is greater than 9 feet.

Install multiple drains in all pools, spas, whirlpools and hot tubs. This minimizes the suction of any one drain, reducing risk of death or injury

Regularly check to make sure drain covers are secure and have no cracks. Replace flat drain covers with dome-shaped ones.

Know where the manual cut-off switch for the pump is in case of emergency. Consider installing an approved safety vacuum release system (SVRS), a tool that quickly and automatically turns off the pump (and stops the suction) when something is trapped in or blocks the drain.

Teach children never to go near a pool drain with or without a cover, and to pin up long hair when in water.

Adults and kids over age 13 should learn infant and child CPR.

Pay attention to open water. Be aware of undercurrents and changing waves and undertows when at the ocean or a lake.

Children with marginal mobility should not be left unattended in a tub or other body of water regardless of age or presumed ability.

Empty all buckets, containers and wading pools immediately after use. Store them
upside-down and out of children's reach.

The American Cancer Society suggests the following guidelines to protect children
from the sun:

Sun Safety Tips

S- Shadow test. If the shadow is shorter than the child, the sun is at its strongest and most dangerous point
.
U- Ultraviolet sun block with an SPF of 15 or greater should always be used if the child is exposed to sun.

N- Now! Protect children from the harmful effects of the sun now.

A blistering sunburn before the age of 10 will double the likelihood of that child developing skin cancer sometime during their lifetime.

Sunscreens cannot take the place of protective clothing and should be used together for the best protection.

Choose a sunscreen with at least a Sun Protection Factor (SPF) of 15 or more. This means you are protected from a reaction to the sun's rays 15 times longer than without the sunscreen. Read the label, and know when to reapply.

Try to keep your children out of the sun between the hours of 10 a.m. and 3 p.m., when the sun's ultraviolet rays are the strongest.

Know the ways of the rays! Your children can get a sun burn on a cloudy day just as easily as on a sunny day.

The sun's rays can penetrate through three feet of water. The sun will also reflect off the water and the sand. A beach umbrella is great but may not provide all the protection needed.

It is great opportunity for these local charities to be recognized by their supporters. This program is also designed to help direct Vivint's philanthropic dollars, which are donated by Vivint employees to eligible charities who are helping restore hope for families across North America.
