Menu Mondays

Here's a great spicy grilled steak recipe from Sarah!

Take 1 1/2 lb flank steak and marinade in the following:
1/2 cup chopped fresh cilantro
1/4 cup olive oil
6 minced garlic cloves
2 tablespoons ground cumin
1 tablespoon ground coriander
1 tablespoon chili powder
1/2 teaspoon cayenne pepper
Chopped fresh chilies, including seeds (optional)

Marinade 3-4 hours room temperature or overnight in the fridge. Grill 6 minutes per side for medium rare, rest for 10 minutes and slice thinly against the grain.

Menu Mondays

It's that time of year - zucchini's coming out of your ear! Here is a zucchini bread recipe from my grandma.

2 cups sugar
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons cinnamon
1/4 teaspoon cloves
1/4 teaspoon ginger
2 cups grated zucchini
3 teaspoons vanilla
3 eggs
1 cup oil
1/2 cup chopped nuts (optional)

Mix dry ingredients in bowl, add remaining and pour into 2 loaf pans. Cook at 325 degrees for one hour.
